This is a Brut-style Prosecco Superiore crafted from Glera grapes grown in the prized hills of Valdobbiadene, offering a drier, more gastronomic expression than many standard Proseccos. Its fine, persistent bubbles and mountain-fresh acidity make it a standout choice for those seeking elegance, precision and authentic terroir character from Northern Italy’s Prosecco heartland.

Tasting Notes
In the glass, this Prosecco Superiore shows a bright, pale straw-yellow hue, animated by a delicate and continuous perlage. The nose is refined and subtly aromatic, with notes reminiscent of golden apples, fresh pear and a gentle floral lift that recalls wildflowers and spring blossoms. On the palate, it is crisp, dry and refreshingly vibrant, with the cooler mountain influence translating into a clean, bright acidity that keeps the wine light on its feet. Flavours of crunchy green and yellow orchard fruits are layered with hints of citrus zest and white flowers, leading to a dry, pleasantly lingering finish. While intended for early enjoyment to showcase its fresh fruit and lively mousse, this non-vintage Brut can comfortably hold for 1–2 years, maintaining its freshness and finesse.

Production
The grapes for San Boldo are sourced from hillside vineyards in Valdobbiadene, where the cooling breezes from the nearby San Boldo pass slow ripening and help preserve acidity and aromatic purity in the Glera grapes. The fruit is carefully harvested—typically by hand on these slopes—to ensure only healthy, optimally ripe clusters reach the cellar. Vinification follows the traditional Charmat (tank) method used for quality Prosecco: a gentle pressing, cool temperature-controlled fermentation to retain delicate aromas, and a secondary fermentation in pressurised tanks to create its fine, persistent bubbles. The result is a Brut Prosecco Superiore that emphasizes precision, freshness and a clean, mineral-driven profile.

Food & Serving
This Brut Prosecco Superiore is a versatile partner at the table, pairing beautifully with fresh seafood (oysters, shrimp, ceviche), light appetizers, sushi, delicate fish dishes and mixed antipasti. Its crisp acidity and dry finish also make it an excellent match for vegetable tempura, soft cheeses and lightly spiced Asian cuisine. Serve well chilled at around 6–8°C (43–46°F) to highlight its finesse and aromatics. Decanting is not necessary; simply open and pour, allowing the wine a brief moment in the glass to release its delicate fruit and floral notes.
