Maria & Sepp Muster Rosé vom Opok Bio 2021 is a serious, dry rosé for grown‑up palates, crafted in the rolling hills of Southern Styria. This biodynamic cuvée marries Zweigelt, Blaufränkisch and the local Blauer Wildbacher into a characterful, quietly complex wine that’s a world away from simple, candy‑fruit rosé. Long aging in large wooden casks and the power of the local Opok marl soils give this wine real depth, structure and gastronomic appeal.

Tasting Notes
In the glass, the Rosé vom Opok 2021 shows a pale to medium copper‑pink hue with subtle onion‑skin reflections, hinting at both delicacy and seriousness. The nose is understated yet intricate: wild strawberry, redcurrant and blood orange peel are interwoven with herbal tones of thyme and wild meadow flowers, plus a gentle, earthy spice and a touch of wet stone. On the palate, this is dry, brisk and finely textured, with more emphasis on structure and minerality than on overt fruitiness. Tart red berry flavors, crabapple and pomegranate meet savory notes of dried herbs and a light, tea‑like tannic grip from the grape skins. The acidity is lively but well integrated, giving the wine a mouthwatering, almost saline finish. Thanks to its long élevage in large wooden casks, the texture is silky and harmonious rather than sharp, and the wine gains extra nuance with air. While delicious now, this rosé has the backbone to age gracefully for 3–5 years from the vintage, developing more savory, spicy and tertiary notes over time.

Production
The Rosé vom Opok takes its name from the distinctive Opok soils of Southern Styria: compact, calcareous marl that imparts a cool, stony minerality and taut structure to the wines. The vineyards are farmed biodynamically by Maria and Sepp Muster, with low yields, great attention to biodiversity and exclusively hand harvesting to ensure only perfectly ripe, healthy fruit is selected. For this cuvée, Zweigelt, Blaufränkisch and the indigenous Blauer Wildbacher are gently pressed over the course of around four hours to obtain a delicate color and fine phenolics. Fermentation is spontaneous with native yeasts in large neutral wooden casks, where the wine then rests for about 20 months on its fine lees. Minimal intervention is the rule: no fining, very light filtration if at all, and only modest sulfur at bottling, resulting in a wine that transparently reflects its terroir.

Food & Serving
This is a food‑driven rosé that shines alongside Mediterranean and alpine cuisine alike. Try it with grilled sea bream or trout, charcuterie, prosciutto and melon, roasted chicken with herbs, grilled vegetables, or hearty salads with lentils or farro. It also pairs beautifully with lighter dishes featuring mushrooms or soft cheeses like chèvre and young alpine cheeses. Serve at 10–12 °C (50–54 °F) to preserve its freshness while allowing the texture and aromatics to open up. A short decant of 15–20 minutes, or simply pouring into large white‑wine glasses, helps the wine express its full aromatic and textural complexity.
