Production
Peppoli Chianti Classico is sourced from the renowned Peppoli estate in the heart of Tuscany’s Chianti Classico zone, where vineyards sit on well-drained, stony soils rich in galestro and alberese. These classic Tuscan soils, combined with warm days and cool nights, help Sangiovese ripen slowly, preserving its aromatic lift and natural acidity. Grapes are harvested parcel by parcel at optimal maturity, typically by hand, to ensure only healthy, perfectly ripe bunches reach the cellar. Fermentation takes place in temperature-controlled stainless steel tanks to retain fresh fruit and floral notes, with careful maceration on the skins to extract color, aroma, and fine tannins. The wine then undergoes malolactic fermentation and is aged for several months in a combination of large Slavonian oak casks and smaller barrels, achieving a refined balance between fruit purity and subtle oak complexity before blending and bottling.
