Tasting Notes
In the glass, Conte Aymo Blanc de Noir 2020 typically displays a luminous, pale copper to onion-skin hue, reflecting its Pinot Noir origins, with a fine, persistent perlage that forms a delicate crown of bubbles. The nose is expressive and complex, offering notes of wild red berries, pomegranate, blood orange zest, and white flowers, intertwined with hints of brioche, toasted hazelnut, and a subtle mineral edge.
On the palate, this Franciacorta is dry, precise, and textural, with a creamy mousse that carries flavors of crunchy red apple, raspberry, citrus peel, and a touch of spice. The Pinot Noir lends structure and gentle tannic grip, balanced by vibrant acidity and a long, savory, mineral-driven finish. Production
Grown in the gently rolling hills around Montenisa in Franciacorta, the grapes for Conte Aymo Blanc de Noir are sourced from carefully selected Pinot Noir vineyards rooted in morainic soils rich in stones, sand, and minerals, which contribute freshness and a marked saline character. Harvest is carried out by hand to preserve berry integrity, with strict selection both in the vineyard and at the winery. The base wines are produced via gentle pressing of whole clusters to extract only the finest must, followed by temperature-controlled fermentation in stainless steel (with a portion often aged on fine lees for added texture and complexity). The wine then undergoes secondary fermentation in bottle according to the traditional method, maturing on its lees in the cool cellars of Franciacorta for an extended period before disgorgement, allowing the mousse to refine and the bouquet to gain depth and complexity.

Conte Aymo Blanc de Noir 2020 is a versatile partner at the table, pairing beautifully with refined antipasti, oysters, tuna tartare, and carpaccio of sea bass or salmon. Its structure and depth also make it superb with dishes like vitello tonnato, poultry in light cream sauces, mushroom risotto, and delicate pork or veal preparations, as well as aged cheeses and charcuterie. For optimal enjoyment, serve well-chilled at 8–10°C (46–50°F). A brief 10–15 minutes in the glass is sufficient for it to open up; extended decanting is not necessary, but pouring into large tulip-shaped sparkling wine glasses rather than narrow flutes will best showcase its aromas and complexity.
