Tasting Notes
Pale straw in the glass with a fine, persistent mousse. The nose is clean and lifted, showing citrus peel, green apple, white flowers and subtle brioche notes, with a mineral edge that reflects its mountain origin. On the palate it is taut and vibrant, with crisp acidity, a creamy bead and flavors of lemon, pear and chalky salinity that finish long and focused. As a Brut Nature millesimato, it emphasizes precision and purity over richness, with no added sweetness to soften the profile. The 2019 vintage should offer excellent drinking now for its freshness and linearity, while also having enough structure to develop additional complexity over the next few years.

Production
Made from 100% Chardonnay in Trentino-Alto Adige, where cool Alpine temperatures and significant day-night variation help preserve acidity and aromatic detail. The grapes are typically harvested by hand to ensure quality and gentle handling, then vinified using the traditional method with secondary fermentation in bottle and extended lees aging to build texture and complexity. The Brut Nature style means no dosage is added at disgorgement, highlighting the purity of the fruit and the terroir.

Food & Serving
Ideal as an aperitif or alongside oysters, scallops, sushi, sashimi, light seafood dishes and delicate white fish. It also works beautifully with fresh goat cheese or simple risottos. Serve well chilled at 6–8°C; decanting is not recommended, but allowing it a few minutes in the glass will help the aromas unfold.
