The Nebbiolo grapes for Botonero Rosso are sourced from steep, terraced south-facing vineyards in Valtellina, rising up to around 700 meters above sea level. Here, poor, stony soils and significant day–night temperature swings naturally limit yields and preserve acidity, while abundant sunlight helps the late-ripening Nebbiolo achieve full aromatic maturity. Grapes are typically harvested by hand due to the steep slopes, allowing careful selection of healthy, ripe bunches. In the cellar, Mamete Prevostini focuses on a gentle vinification to highlight finesse rather than power: a controlled fermentation with moderate maceration extracts color and aroma without overemphasizing tannin. Aging is carried out in a way that preserves freshness and clarity of fruit—often in stainless steel and/or large neutral vessels—resulting in a pure, vibrant mountain Nebbiolo with minimal oak influence.
