Tasting Notes
In the glass, AIX Rosé shows a luminous, pale salmon-pink hue with subtle copper highlights that is classic for high-quality Provence rosé. The nose is vibrant and expressive, offering notes of wild strawberries, red currants and white peach, supported by hints of citrus zest, spring flowers and a touch of Provençal herbs.
On the palate, this is a dry, crisp and finely textured rosé with plenty of juicy red berry fruit, stone fruit and citrus, balanced by refreshing acidity and a long, clean finish. Gentle notes of watermelon, raspberry and a subtle minerality add complexity without ever weighing the wine down. While designed to be enjoyed young for its fresh, lively character, AIX Rosé in large-format bottles can hold its freshness for a couple of years when properly stored, with magnums and above often aging more gracefully than standard bottles.
Production
Maison Saint AIX sources its fruit from vineyards in the higher-altitude areas of Provence, where warm, sunny days and cool nights help preserve acidity and aromatics in the grapes. The soils are typically a mix of limestone, clay and stony, well-drained terrain that naturally limits yields and concentrates flavor. Grapes are usually harvested in the cool of the early morning to keep them fresh and protect delicate aromas. In the cellar, the wine is made using the classic Provençal rosé method: gentle pressing of red-skinned grapes (often Grenache-led, with typical regional varieties such as Syrah and Cinsault), followed by cool-temperature fermentation in stainless steel to capture purity, finesse and that hallmark pale color. The non-vintage approach allows the estate to blend different lots for consistency and balance year after year.
Food & Serving
AIX Rosé is a versatile partner for Mediterranean-inspired cuisine and light, summery dishes. It pairs beautifully with grilled prawns, oysters, sushi and sashimi, Niçoise salad, grilled vegetables, fresh goat cheese, charcuterie and simple roasted chicken with herbs. Serve well-chilled, ideally around 8–10°C (46–50°F), to highlight its crisp, refreshing profile. For the 6L bottle, allow a little extra time in an ice bucket to reach serving temperature, and if serving at a more formal occasion, you can gently decant a portion into a chilled carafe to make pouring easier and to let the aromatics open up in the glass.
