Tasting Notes

The nose opens with fresh green apple, lemon zest, and pear, layered with white flowers, chalky minerality, and a touch of brioche and almond from aging on the lees. Production
Sourced from Chardonnay vineyards in the Jura region of eastern France, this cuvée reflects a cool, continental climate and limestone-rich soils that naturally lend themselves to crisp, mineral-driven sparkling wines. Grapes are harvested at relatively low potential alcohol to preserve high acidity and aromatic delicacy, then gently pressed to obtain a pure, fine juice. Fermentation occurs in temperature-controlled stainless steel to capture fresh fruit character, followed by a second fermentation in bottle according to the traditional method. The wine spends time aging on its lees to build texture, creaminess, and subtle pastry notes before disgorgement and a very low dosage, resulting in the Extra Brut style that highlights the terroir’s precision.

This Extra Brut Blanc de Blancs is a natural partner for oysters, shellfish platters, sushi, and sashimi, as well as delicate fish dishes such as ceviche or lightly grilled white fish. It also pairs beautifully with goat cheese, fresh cheeses, vegetable tempura, and elegant canapés, or simply as a refined apéritif. Serve well chilled at around 6–8°C (43–46°F) to emphasize its freshness and minerality. A brief 5–10 minutes in the glass is sufficient; extended decanting is not necessary, though opening the bottle a few minutes before serving allows the aromas to unfold nicely.
