NSD stands for "Never Stop Dreaming," and this Lambrusco Rosé lives up to the name with a rare and exciting take on traditional Italian sparkling wine. Made entirely from Lambrusco Salamino and crafted with classic bottle fermentation and no dosage, it offers a dry, refined expression that is unusual for the category and a true find from Emilia-Romagna.

Tasting Notes
In the glass, it shows a delicate rosé hue with a lively, fine mousse. The nose is fresh and inviting, with notes of wild berries, red cherry, pomegranate, and subtle floral hints, layered with a gentle yeasty complexity from extended lees aging. The palate is dry, crisp, and focused, with bright red fruit, refreshing acidity, and a clean, mineral finish. The absence of dosage keeps the wine precise and elegant, while 24 months on the lees add texture and depth. Best enjoyed young for its vibrancy, though it will hold nicely over the next few years.

Production
This wine comes from Emilia-Romagna, a region long associated with Lambrusco, but here the grape is elevated through an artisanal, traditional approach. The 100% Lambrusco Salamino grapes are pressed immediately after harvest with the full bunches intact, then fermented in stainless steel with regular bâtonnage to build texture and aromatic complexity. After six to seven months of tank maturation, the wine undergoes secondary fermentation in bottle and rests on the lees for 24 months before disgorgement and release.

This dry sparkling rosé is highly versatile at the table and works beautifully with charcuterie, prosciutto, salami, fried appetizers, pizza, roast chicken, and grilled vegetables. Serve well chilled at 6–8°C, and decanting is not necessary.
