Sourced from Lungarotti’s estate vineyards in Umbria, San Giorgio typically blends international varieties like Cabernet Sauvignon with native grapes such as Sangiovese, rooted in clay-limestone soils that promote both concentration and aromatic finesse. The region’s warm days and cooler nights help the grapes achieve full phenolic ripeness while preserving acidity and fragrance. Grapes are harvested by hand at optimal maturity to ensure careful selection of only the healthiest bunches. After gentle crushing, fermentation takes place in temperature-controlled tanks to extract color, aroma and structure without harshness. The wine is then matured in oak (often a mix of barriques and larger casks), allowing the wood to polish the tannins and contribute subtle notes of spice, cocoa and toast, before further bottle aging to harmonize its components.
