Production
Sourced from hillside vineyards in Umbria around the historic village of Montefalco, this Sagrantino benefits from a continental climate with warm days, cool nights, and well-drained, clay-limestone soils that naturally limit yields and concentrate flavour. Grapes are typically harvested by hand to ensure optimal ripeness and careful selection of bunches, an important step for a variety as structured as Sagrantino. In the cellar, the wine undergoes a controlled fermentation to gently extract colour, tannin, and aromatics, followed by extended maceration to build depth. It is then aged in a combination of oak and bottle to tame the tannins, polish the texture, and integrate the complex spice and cocoa notes that define this style.
Food & Serving
This is a superb food wine, ideally matched with rich, flavourful dishes that can stand up to its structure. Think slow-braised lamb shank, ossobuco, wild boar ragù, grilled or roasted red meats, aged pecorino, and other mature hard cheeses. It also pairs beautifully with hearty stews, truffle dishes, and game birds. Serve at 16–18°C to highlight its aromatic complexity and textural depth. Decant for at least 1–2 hours in its youth to soften the tannins and allow the layered aromas of spice, cocoa, and dark fruit to fully open.
