Tasting Notes
In the glass, the 2007 Rubesco Riserva shows a beautifully evolved garnet-red color with brick-orange reflections at the rim, a sign of its maturity and careful aging. The nose is complex and layered: dried cherries, blackcurrant and plum are interwoven with notes of tobacco leaf, leather, cedar, balsamic herbs and a hint of sweet spice and undergrowth.

Production
Rubesco Riserva is sourced from prime hillside vineyards around Torgiano in Umbria, where Sangiovese thrives in clay- and limestone-rich soils that lend both structure and minerality. The continental climate, with warm days and cooler nights, allows for a long, balanced ripening of the grapes, preserving acidity and aromatic depth. Grapes are typically harvested by hand to ensure careful selection in the vineyard, then brought to the cellar for gentle crushing and fermentation under controlled temperatures to extract fine tannins and pure fruit character. After fermentation, the wine is aged for an extended period in oak barrels and then in bottle before release, a traditional approach that builds complexity, smooths the tannins and prepares the wine for long-term aging—especially in large formats like this 3.0 L.

This mature Umbrian Sangiovese is a superb partner for rich, savory dishes such as braised lamb shank, ossobuco, slow-cooked beef, game (venison, wild boar), and truffle-infused cuisine. It also pairs beautifully with aged hard cheeses like Pecorino or Parmigiano-Reggiano and hearty pasta dishes with ragù. Serve at 16–18 °C to highlight its aromatic complexity and balance.
