Drawn from the very first vintage overseen by Jean‑Baptiste Lecaillon as Chef de Caves, this late‑disgorged release shows just how beautifully great Champagne can evolve. Lower dosage and extended aging have shaped a wine of remarkable depth, complexity, and finesse that will delight serious collectors and Champagne lovers alike.

Tasting Notes
In the glass, the 1999 Late Release Vintage Brut shows a luminous deep gold hue, with a fine, persistent mousse that speaks to its long maturation on the lees. The nose is opulent and layered: ripe orchard fruits—golden apples, baked pear, and peach—mingle with mandarin zest, buttered pastry, brioche, and a subtle iodine/mineral note that adds tension and intrigue. On the palate, it is medium to full‑bodied, richly textured, and generous, with a mouth‑filling, almost gourmand profile. The ripe fruit character is wrapped in flavors of flaky viennoiserie, almond cream, and a touch of honey, all lifted by a still‑lively acidity and fine, chalky structure. The finish is long, juicy, and savory, leaving hints of citrus oil, toasted brioche, and sea spray. This bottling is in a beautiful drinking window now and can be enjoyed over the next few years, but it is very much at or near its peak.

Sourced from Louis Roederer’s prime holdings in Champagne, this late‑release 1999 Brut Vintage reflects a classic blend of Pinot Noir and Chardonnay from chalk‑rich, well‑exposed vineyards. The 1999 growing season delivered ripe, generous fruit with slightly lower natural acidity, which informed the house’s approach. Grapes were hand‑harvested at optimal ripeness, carefully sorted, and gently pressed, with vinification carried out cru by cru and variety by variety to preserve precision. Under Jean‑Baptiste Lecaillon’s direction, a lower-than-usual dosage was chosen at disgorgement to balance the vintage’s softer acid profile and to favor long, graceful aging on the lees, resulting in the profound complexity and mature character evident today.

Food & Serving
This mature Champagne is exceptionally food‑friendly and shines alongside refined dishes. Pair it with butter‑poached lobster, scallops in a champagne or citrus‑cream sauce, roasted turbot, or classic sole meunière. It also works beautifully with roast chicken, veal in a light jus, or rich mushroom dishes, as well as aged hard cheeses and creamy cow’s milk cheeses. Serve well‑chilled but not icy, ideally around 10–12°C (50–54°F). Given its age and complexity, a gentle decant in a wide‑bellied decanter for 15–20 minutes—or simply allowing it to open in a generous white wine or tulip‑shaped Champagne glass—will help the subtle, mature aromas fully unfold.
