The vines are typically tended with careful, sustainable viticulture to limit yields and concentrate flavor, with hand harvesting to ensure only the healthiest, ripest bunches reach the winery. After sorting, the grapes are generally destemmed (with the potential inclusion of a small proportion of whole clusters, depending on the vintage) and undergo a temperature-controlled fermentation to preserve freshness and aromatic purity. Gentle extraction through remontage or pigeage brings out color and tannin without harshness.
