Tasting Notes
In the glass, the 2020 Les Demoiselles is a luminous, pale gold with green reflections, hinting at its youth and energy. The nose is finely etched and complex: aromas of white flowers, acacia and hawthorn weave together with notes of lemon zest, ripe pear, and white peach. As it opens, more layered nuances emerge—subtle hazelnut, fresh almond, chalk dust, and a whisper of fine oak spice and brioche from its élevage in barrel.
On the palate, this wine is both concentrated and crystalline. A core of ripe orchard and citrus fruits is framed by a precise, saline minerality that is very much the signature of Chevalier-Montrachet’s upper-slope vineyards. The texture is silky yet tightly structured, with vibrant acidity carrying flavors of lemon curd, crushed stones, and delicate vanilla and toast. The finish is extraordinarily long and persistent, leaving a lingering impression of citrus oil, wet stone, and fine spice. Still youthful, the 2020 has excellent aging potential—expect it to evolve beautifully over 10–20 years, gaining layers of honeyed complexity, roasted nuts, and truffle while retaining its underlying tension and elegance.
Production
Les Demoiselles is situated in the heart of Chevalier-Montrachet, perched on the upper slopes above Montrachet on thin, stony soils rich in limestone with a bit of clay. This high, well-drained, east- to southeast-facing terroir gives naturally low yields and small, intensely flavored berries, translating into wines of great minerality and focus. Grapes are carefully hand-harvested at optimal ripeness and sorted to ensure only pristine fruit reaches the press. At Louis Jadot, the must is gently pressed and then fermented in French oak barrels, a portion of which are new, to bring texture and complexity without overwhelming the purity of the fruit. The wine is aged on fine lees for around 15–18 months, with periodic bâtonnage depending on the vintage, allowing it to develop depth and structure while preserving its hallmark precision and freshness.
Food & Serving
This Grand Cru Chardonnay shines alongside refined, delicately prepared dishes. Think butter-poached lobster, scallops in a light beurre blanc, turbot or sole with a citrus or Chardonnay cream sauce, and roasted poultry—especially Bresse chicken with morels or truffle. It also pairs beautifully with fine, not overly pungent cheeses such as Comté, aged Gruyère, or a mild, creamy goat’s cheese. Serve at 10–12°C (50–54°F) to highlight its aromatic complexity and tension; avoid serving too cold, which can mute its nuance. In its youth, decanting for 30–60 minutes can help the wine unfold and reveal its layered bouquet; with more bottle age, gentler handling and a shorter aeration are recommended.
