Tasting Notes
In the glass, this Franciacorta pours a bright, luminous straw yellow with a fine, persistent perlage that forms a delicate, creamy mousse. The nose opens with fresh orchard fruits—green apple, pear, and white peach—layered with notes of citrus zest, white flowers, and a subtle, chalky minerality. Hints of brioche and almond suggest its time aging on the lees without ever feeling heavy.
On the palate, Cuvée n. 7 is dry, lively, and juicy, with a core of ripe fruit that feels both generous and precise. The mineral backbone from the calcareous and clay soils brings focus and tension, while the morainic soils contribute softness and floral roundness. Lo Sparviere’s vineyards for Cuvée n. 7 lie within the Franciacorta DOCG in Lombardy, rooted in a mosaic of calcareous and clay-rich parcels as well as glacial morainic soils. The calcareous and clay components lend tension, structure, and marked minerality, while the morainic sites contribute floral aromatics and a rounder, more supple fruit profile—all from 100% Chardonnay. Grapes are typically hand-harvested to ensure careful selection and protection of the fruit’s natural freshness. After gentle pressing, the must is fermented in stainless steel at controlled temperatures to preserve aromatic purity, followed by a secondary fermentation in bottle according to the metodo classico. The wine then rests on its lees for an extended period, allowing fine bubbles to develop and subtle autolytic notes to emerge, before disgorgement and a carefully judged dosage to maintain a crisp, Brut style.
