Tasting Notes

Production
The grapes are hand-harvested and briefly chilled before being gently pressed. The must is kept separate to preserve the purity and expression of the aromas, while fermentation takes place slowly at low temperatures between 14 and 20°C. The wine is then matured on fine lees with regular bâtonnage, a process that enhances its body, complexity and balance. Produced in the natural surroundings of Saint-Tropez, it reflects the elegance and finesse associated with the Côtes de Provence appellation.

Food & Serving
Serve chilled at around 8–10°C. Château La Moutte is a versatile partner for Provençal cuisine, grilled fish, shellfish, sushi, salads, fresh goat’s cheese and light poultry dishes. It also works beautifully with Mediterranean appetisers and delicate vegetable preparations. Decanting is not necessary; simply allow the bottle a few minutes in the glass to reveal its floral and fruit aromas.
