Les Ursulines Pinot Noir Jean-Claude Boisset 2023 is a pure, terroir-driven expression of Burgundy’s most iconic grape. Tasting Notes
In the glass, Les Ursulines Pinot Noir 2023 shows a very intense, deep ruby-red hue that hints at its concentration. The nose opens with ripe red and dark fruits—think juicy cherry, wild strawberry and blackberry—layered with subtle peppery spice, a touch of dried rose, and a delicate whisper of oak.
On the palate, the wine is vibrant yet refined, with a lively, refreshing acidity that keeps the ripe fruit in perfect balance. Flavours of cherry, blackcurrant and blackberry are wrapped in silk-smooth tannins, giving a supple, velvety mouthfeel. Gentle notes of spice and a hint of earthiness emerge on the finish, adding complexity without weight. Enjoyable in its youth for its purity and freshness, this 2023 vintage should develop further harmony and nuance over the next 4–7 years under good cellaring conditions.
Production
This Pinot Noir is sourced from 35–40-year-old vines rooted in classic Burgundian clay and limestone soils, which naturally limit yields and enhance concentration and minerality. The grapes are hand-harvested, with a first sorting directly in the vineyard and a second meticulous selection on the sorting table at the winery to ensure only perfect fruit is used. Upon arrival, the grapes are fully destemmed, then gently pressed, with the must transferred by gravity into fermentation tanks to protect delicacy and aroma. A total maceration of around 20 days allows for a careful, controlled extraction of colour, flavour and fine tannins. The wine is then aged on its lees for seven months in French oak barrels, of which about 10% are new, lightly toasted barrels, adding subtle structure and nuance without overpowering the fruit.

Les Ursulines Pinot Noir 2023 is a versatile partner at the table, pairing beautifully with roast chicken, duck breast, pork tenderloin, charcuterie, and classic Burgundian dishes such as coq au vin or boeuf bourguignon. It also works wonderfully with grilled salmon, mushroom risotto, and semi-soft cheeses like Brie or Reblochon. For best enjoyment, serve at 14–16°C (57–61°F). A brief decant of 20–30 minutes helps the wine open up its aromatic profile, especially in its first few years, revealing greater depth and spice.
