Leon Domecq Pedro Ximenez Señorío de Callao is a luxuriantly sweet Andalusian wine crafted from sun-dried Pedro Ximenéz grapes in the heart of Jerez. Made in tiny quantities by the historic Bodegas León Domecq, it captures the deep, velvety intensity that has made PX one of Spain’s most treasured dessert styles. This non-vintage bottling blends solera-aged wines to deliver a consistently opulent, old-world expression of Jerez tradition.

Tasting Notes
In the glass, Señorío de Callao shows an inky, almost opaque mahogany colour with dense amber and iodine hues clinging to the rim, hinting at both concentration and age. The nose is intensely aromatic and layered: think sun-drenched raisins, figs, dates and prunes, wrapped in notes of caramel, toffee, molasses and dark chocolate, with subtler tones of roasted coffee, orange peel and a touch of sweet spice. On the palate, this Pedro Ximenéz is unctuous and mouthcoating, with a silky texture and remarkable depth. Flavours of dried fruit compote, treacle, toasted nuts and cocoa unfold slowly, balanced by a gentle acidity that keeps the sweetness from feeling heavy. The finish is very long, echoing with raisin, burnt sugar and a savoury, almost saline hint that speaks of its Andalusian origins. Thanks to its fortified structure and oxidative aging, this wine offers excellent aging potential in bottle; well-stored, it can remain vibrant and complex for many years after purchase, even once opened if kept cool and properly sealed.

Production
Señorío de Callao is rooted in the classic albariza soils of the historic Macharnudo terroir, one of the most revered vineyard zones in the Jerez area. Here, the intense Andalusian sun and maritime breezes from the Atlantic help Pedro Ximenéz reach full ripeness before the bunches are traditionally sun-dried (asoleo) to concentrate sugars, flavours and texture. The grapes are then gently pressed, and the resulting must is fortified and aged oxidatively in the traditional Jerez solera and criadera system, housed in old casks within the century-old bodega walls on Calle Justicia 28. This fractional blending process ensures a consistent house style while layering younger, vibrant wines over older, deeply complex stocks that embody the estate’s long history.

Food & Serving
This Pedro Ximenéz is a natural partner for rich desserts such as sticky toffee pudding, dark chocolate fondants, flourless chocolate cake, tiramisu, or vanilla ice cream topped with a drizzle of the wine itself. It also works beautifully with blue cheeses (Stilton, Roquefort, Cabrales), aged manchego, or as a contemplative after-dinner pour on its own. Serve lightly chilled, around 10–14°C, to highlight its aromatics without muting the texture. Decanting is generally not necessary, but pouring it slowly into a clean, small wine glass or copita and giving it a few minutes in the glass will allow the layers of aroma and flavour to fully open.

Bodegas León Domecq is an historic house in Jerez de la Frontera, with roots stretching back to 1850 in one of the city’s most authentic quarters. From their traditional premises on Calle Justicia 28, the family has long worked with vineyards from the once-prominent ‘La Compañía’ site on the road from Jerez to Trebujena, adjacent to the El Majuelo estate in the esteemed Macharnudo terroir. The story of La Compañía is intimately linked with generations of the León Domecq family, heirs to visionary figures such as Tomás Domecq Rivero, who helped elevate Sherry to global renown. Today, the bodega is regarded as a small oenological jewel of Jerez, preserving time-honoured methods and classic solera stocks while showcasing some of the region’s most characterful, traditionally styled wines.
