Leon Domecq Fino En Rama Señorío de Callao is a vibrant, unfiltered Fino Sherry that captures the purest expression of Jerez in your glass. Bottled ‘en rama’—with minimal filtration—it preserves all the nuance, texture and character that traditional Finos can sometimes lose. Made from 100% Palomino grown on prized albariza soils, this is a wine for drinkers who want to experience Sherry in its most authentic form, just as it tastes in the bodega.

Tasting Notes
In the glass, this Fino shows a pale straw to light lemon hue with a slight haze, a natural sign of its en rama bottling. Swirl it and you’ll notice delicate tears and a brightness that hints at its freshness and coastal origins. On the nose, it opens with classic flor-driven aromas: green almonds, salted Marcona nuts, fresh bread dough and chamomile, layered with sea spray, chalk, lemon peel and a faint touch of wild herbs. The palate is bone dry, razor-sharp and intensely savory, with flavors of salted almond, green olive brine, dried apple, lemon zest and a chalky, almost saline minerality that feels lifted and mouthwatering. The texture is slightly more generous and textural than a heavily filtered Fino, with a lingering, nutty, umami-rich finish. Best enjoyed within 1–2 years of bottling to capture its full en rama vibrancy, though an unopened bottle stored well will hold nicely for a few years; once opened, treat it like a white wine and enjoy over a few days while it’s at its most expressive.

Production
This Fino originates from the historic Macharnudo area, one of Jerez’s most esteemed pagos, where Palomino vines grow in brilliant white albariza soils that act like a natural reservoir, storing winter rains and reflecting sunlight back onto the grapes. Leon Domecq farms traditional vineyards that once formed part of the renowned ‘La Compañía’ estate on the road from Jerez to Trebujena, long recognized for producing grapes of exceptional finesse for biologically aged wines. Grapes are harvested at optimal ripeness for Fino—relatively early to retain acidity—then gently pressed to obtain the finest must. After fermentation in stainless steel or traditional vessels to dryness, the base wine is fortified to Fino strength and aged under a living veil of flor yeast in seasoned American oak butts using the traditional solera and criadera system. Bottling en rama means only light clarification and minimal filtration, preserving the natural turbidity, aromatic intensity and full, complex character that develop in the bodega.

Food & Serving
This Fino En Rama is a natural partner for all things from the sea: fresh oysters, prawns a la plancha, boquerones, clams, and simply grilled white fish all sing alongside its saline, nutty edge. It also shines with Iberian classics such as jamón ibérico, Manchego or Payoyo cheese, salted almonds, artichokes, and tapas like tortilla española or marinated olives, as well as sushi, sashimi and delicate tempura. Serve well-chilled, ideally at 7–9°C (45–48°F), in a white wine glass or copita to allow the aromatics to unfold. Decanting isn’t necessary, but opening the bottle 10–15 minutes before serving and giving it a good swirl in the glass helps the flor-driven notes and subtle complexity emerge fully.

Bodegas León Domecq is an historic house in the heart of Jerez, with roots dating back to 1850 in the traditional bodega district around Calle Justicia 28.
