Le Vieux Donjon farms its Châteauneuf-du-Pape vineyards on the region’s classic mosaic of terroirs, including parcels with rounded galets roulés (large river stones), limestone-rich soils, sand, and clay that help maintain both ripeness and freshness in the fruit. The white grapes—here, an even 50/50 blend of Clairette and Roussanne—are hand-harvested at optimal ripeness to preserve acidity in the warm Southern Rhône climate. After gentle pressing, the must is fermented in temperature-controlled stainless-steel tanks, a traditional, low-intervention approach at this estate that avoids oak influence and focuses on clarity of fruit and terroir. The wine is then aged on fine lees in stainless steel before bottling, building texture and complexity while retaining a clean, mineral-driven profile.
