Tasting Notes
In the glass, the 2003 Le Vieux Donjon CNDP shows a deep garnet core shading to brick at the rim, a clear sign of its evolution. The nose is expressive and mature, with notes of dried figs, raisins, macerated cherries and plum compote, backed by hints of garrigue, tobacco leaf, leather and warm spices.
On the palate, this is a sweet-fruited, velvety and nicely textured Châteauneuf, with soft, resolved tannins and a rounded, almost plush mouthfeel. Flavors of stewed red berries, fig, prune, dried herbs and a touch of licorice unfold with air, framed by gentle acidity that keeps the wine from feeling heavy. The overripe fruit profile of the hot 2003 vintage is evident, but still harmonious and pleasurable. Production
Le Vieux Donjon farms traditional Châteauneuf-du-Pape terroir in the southern Rhône, with a mix of classic galets roulés (large rounded stones), clay and sandy soils that encourage ripeness and concentration while retaining some freshness. The 2003 vintage was marked by intense summer heat, pushing Grenache and its blending partners—typically including Syrah, Mourvèdre and other permitted varieties—to high levels of ripeness. Harvesting is done by hand, with careful sorting to retain only the healthiest, fully ripe fruit. In the cellar, Le Vieux Donjon follows a traditional approach, with destemmed or partially destemmed grapes undergoing fermentation in concrete or stainless steel, followed by aging in large neutral foudres or older barrels, allowing the character of the fruit, vintage and terroir to shine without heavy new oak influence.
Food & Serving
This mature 2003 CNDP is best paired with richly flavored, rustic dishes that can complement its sweet, evolved fruit and soft texture: think slow-braised lamb shanks, duck confit, cassoulet, roasted game birds, Provençal beef daube or a truffle-inflected mushroom ragout. It also works beautifully with aged hard cheeses such as Comté or a well-matured Gouda. Serve at around 16–18°C (60–64°F) to keep the alcohol in balance and the aromatics lifted. Given its age and the likelihood of sediment, decant gently 30–60 minutes before serving to clarify the wine and allow the bouquet to fully open, but avoid extended decanting that could cause the remaining fruit to fade.
