Tasting Notes
In the glass, Le Pauillac de Latour 2020 shows a deep, vibrant ruby color with youthful purple highlights hinting at its energy and concentration. The nose is expressive and finely detailed, offering layers of sweet red and black berries, vibrant cassis, and dark cherry, lifted by notes of licorice, violet and rose petals, and a subtle graphite and cedar nuance that speaks clearly of Pauillac. On the palate, the wine is medium to full-bodied, with lively, refreshing acidity and polished, sweet-edged tannins that frame the fruit without ever feeling harsh. Ripe blackcurrant, blackberry, and red plum are interwoven with hints of anise, tobacco leaf, and a gentle savory, mineral edge. The finish is long and penetrating, leaving a fine trail of dark fruit, spice, and florals. While already appealing in its youth, this 2020 has the structure to evolve gracefully over the next 8–12 years in bottle, gaining complexity and finesse with time.

Production
Sourced from younger vines and less optimally situated parcels within the illustrious Pauillac vineyards of Château Latour, Le Pauillac de Latour benefits from the same meticulous attention to detail as the grand vin. The gravelly, well-drained soils over limestone and clay provide ideal conditions for Cabernet Sauvignon–dominant blends, promoting deep root systems and naturally low yields. Grapes are harvested by hand at optimal ripeness, carefully sorted parcel by parcel before vinification. Fermentation takes place in temperature-controlled vats, allowing for gentle extraction of color, aroma, and fine tannins. The wine is then aged in French oak barrels (with a more moderate proportion of new oak than the grand vin), where it develops texture, harmony, and complexity while preserving its vibrant, fruit-forward character.

Food & Serving
Le Pauillac de Latour 2020 is a superb partner for classic roast lamb, dry-aged ribeye, duck breast, or veal with truffle jus, as well as rich dishes like beef bourguignon or mushroom and thyme risotto. It also pairs beautifully with aged hard cheeses such as Comté, Manchego, or mature Cheddar. Serve at 16–18°C (60–64°F) to highlight its aromatics and structure. Given its youth and concentration, decanting for 1–2 hours is recommended, especially from a 3 L double magnum, to allow the wine to open fully and reveal its layers of fruit, florals, and Pauillac minerality.
