L'Aventure Optimus 2020

L'Aventure Optimus 2020 is a powerful, highly expressive red blend from Paso Robles that showcases the style and precision of French-born winemaker Stephan Asseo. Built on Syrah, Cabernet Sauvignon, and Petit Verdot from the estate’s Willow Creek District vineyards, it combines deep fruit, firm structure, and unmistakable terroir character in one compelling bottle.

Tasting Notes
In the glass, Optimus 2020 shows a deep ruby color with impressive density. The nose opens with layers of black and red cherry, blackberry, and plum, lifted by savory notes of thyme, olive tapenade, and a subtle floral hint of dried violets. The palate is full-bodied and structured, with juicy acidity and tannins that are firm yet already approachable. Dark berries, spice, and a touch of smoke carry through to a long, complex finish. While delicious now, it has the concentration and balance to age gracefully for up to 10 years or more.

Production
The grapes are grown on L'Aventure Estate in the Willow Creek District of Paso Robles, where calcareous shale soils rich in marine fossils and minerals contribute to the wine’s distinctive mineral-driven profile. The blend is composed of 58% Syrah, 31% Cabernet Sauvignon, and 11% Petit Verdot. After harvest, the wine undergoes alcoholic fermentation in 60% new French oak barrels, followed by full malolactic fermentation, and is then aged for 14 months in oak. It is bottled without fining or filtration to preserve its natural texture and complexity.

Food & Serving
This is an excellent match for grilled beef fillet, duck, game, or richly flavored mushroom dishes. Serve at 16–18°C, and consider decanting for 1–2 hours if opening it young to allow the aromatics and structure to fully unfold.
