L'Aventure Estate Cabernet Sauvignon 2019 is a standout Paso Robles Cabernet that captures both power and precision in one bottle. Crafted mainly from Cabernet Sauvignon with a touch of Petit Verdot, it reflects Stephan Asseo’s signature style: deeply concentrated, beautifully structured, and built to impress. It also carries the spirit of one of California’s most original boutique estates, founded by a winemaker who left France to make wines without compromise.

Tasting Notes
In the glass, it shows a deep, dark ruby-red color that hints at its intensity. The nose is layered and expressive, with ripe blackcurrant, blueberry, cassis, licorice, pencil lead, dried herbs, and a touch of graphite. The palate is full-bodied and densely packed, delivering dark cherry, black berry fruit, cassis, tobacco, licorice, and savory oak spice. Despite its richness, the wine has a firm structure and a long, persistent finish that suggests excellent aging potential. While approachable with a few years in bottle, it is expected to evolve beautifully over 4-5 years or more.

Production
The grapes come from L’Aventure Vineyard in Paso Robles, where low yields help ensure concentration and quality. The site benefits from chalky soils and maritime influences, giving the wine both depth and freshness in a region known for bold, high-character reds. Harvesting is done by hand with careful sorting, and malolactic fermentation takes place in barrel before the wine is aged for 15 months in 100% new French oak.

Food & Serving
This is a serious Cabernet Sauvignon that pairs best with rich dishes such as grilled ribeye, roast lamb, braised short ribs, or beef tenderloin with pepper sauce. It also works well with aged hard cheeses and hearty mushroom-based dishes. Serve at around 16-18°C and consider decanting for 1-2 hours, especially if opened young, to allow the wine to fully раскрыться.

L’Aventure was founded in 1998 by French winemaker Stephan Asseo, who left the constraints of the French appellation system in search of creative freedom. After traveling through some of the world’s great wine regions, he found his ideal home in Paso Robles, where he has built one of California’s most admired estates. His wines, often inspired by a “Rhône meets Bordeaux” philosophy, have earned major critical acclaim over the years, including top scores from leading wine critics.
