La Scolca Soldati Metodo Classico Brut is a refined Piedmontese sparkling wine made from Cortese and crafted with the traditional method, giving it remarkable finesse and depth. Its long lees aging and more than 24 months in bottle bring a layer of complexity that sets it apart, while its roots in the Gavi area underline a strong regional identity.
Tasting Notes
In the glass, it shows a bright, elegant mousse and a pale straw colour with subtle golden highlights. The nose opens with delicate notes of yeast and fresh bread crust, gradually unfolding into hints of honey and gentle spice.
On the palate, it is crisp and well-balanced, with Cortese’s natural freshness supporting a creamy texture and a clean, refined finish. The extended time on the lees adds nuance and persistence, making this a sparkling wine with good short- to medium-term aging potential.

Produced in Piemonte from Cortese grapes, this wine reflects the cool-climate elegance of the Gavi zone and the grape’s suitability for Metodo Classico sparkling wine. The slow fermentation on lees is followed by more than 24 months of bottle aging, allowing the wine to build complexity, texture, and aromatic detail.
Food & Serving
A versatile sparkling wine, it pairs beautifully with aperitifs, delicate seafood, sushi, light white meats, and creamy risottos. Serve well chilled at 6–8°C; decanting is not necessary.
