Tasting Notes
Expect a bright, finely beaded sparkling wine with a pale straw colour and a lively, elegant mousse. The nose is refined and focused, with notes of citrus, green apple, white flowers and a subtle brioche-like complexity from time on lees. On the palate, it is crisp and linear, balancing fresh orchard fruit and lemon zest with a chalky, mineral edge and a creamy texture. The finish is clean, persistent and sophisticated, with enough structure to evolve beautifully in bottle over the next several years.

Made from 100% Chardonnay, this Blanc de Blancs comes from Kumeu River in Auckland, a cool-climate region well suited to preserving freshness and acidity. The wine reflects careful vineyard selection and meticulous cellar work, with a traditional approach that emphasises balance, purity and elegance rather than overt richness.

Food & Serving
Serve well chilled at around 8–10°C. It pairs beautifully with oysters, crab, sashimi, tempura, roast chicken or creamy goat’s cheese, and it also works wonderfully as an aperitif. Decanting is not necessary; if anything, give it a few minutes in the glass to fully open up.
