This is a finely etched, mineral-driven white that balances purity of fruit with a distinctly savory, stony edge. Crafted in a low‑intervention style, it reflects both the individuality of the grape and the region’s ancient limestone-rich soils. The “Trias” name alludes to the Triassic rock formations that underpin the vineyards, giving this wine its pronounced mineral backbone and tension. Small-scale, hands-on production and naturally careful farming allow Konni & Evi to bottle an authentic snapshot of place and vintage. Silvaner has a long history in central Germany, and this cuvée feels like a modern, artisanal interpretation of a classic regional variety.

Tasting Notes
In the glass, Silvaner Trias 2022 shows a pale lemon to light straw color with greenish reflections, suggesting freshness and youth. Swirl the glass and you’ll notice fine, lively legs that hint at a crisp, medium-bodied white. The nose opens with fresh pear, green apple, and white peach, layered with meadow herbs, lime zest, and a distinct chalky, wet‑stone minerality. Subtle notes of fennel, crushed blossom, and a delicate savory tone add complexity as it warms in the glass. On the palate, the wine is precise and focused, with a clean, linear attack. Bright, citrusy acidity (think lemon pith and grapefruit) is wrapped around flavors of crunchy apple, quince, and lightly underripe stone fruit. The mineral core is unmistakable—saline, stony, almost tactile—giving the wine a firm structure and a mouthwatering, dry finish. Texture is sleek rather than opulent, with just enough mid-palate weight to keep it balanced. Production
Konni & Evi farm their Saale-Unstrut vineyards with a strong focus on biodiversity and soil health, drawing character from limestone and shell-bearing Triassic formations that lend the wine its marked minerality. Yields are kept modest to concentrate flavor, and the grapes are typically harvested by hand to ensure only healthy, optimally ripe clusters make it to the cellar. In keeping with their minimal‑intervention philosophy, the Silvaner Trias is fermented spontaneously with native yeasts, often in stainless steel or neutral vessels, to preserve clarity of fruit and terroir. Gentle pressing, minimal fining or filtration, and a restrained approach to sulfur use help retain the wine’s texture, vitality, and authentic expression of place.

Food & Serving
This is a versatile food wine that pairs beautifully with freshwater fish, simply grilled white fish, sushi and sashimi, and shellfish such as prawns or mussels. It also works wonderfully alongside asparagus dishes (a classic Silvaner match), spring vegetables, light poultry, herbed salads, soft goat’s cheese, and mild, creamy cheeses. Serve well chilled but not ice-cold, ideally around 9–11 °C (48–52 °F), to allow the aromatics and minerality to unfold. Decanting is not essential, but a short time in the glass or a quick splash into a carafe can help open up the wine’s more subtle herbal and savory notes.

During my visit to the winery, I was assured that the Saale-Unstrut region is also called the Thuringian Tuscany... well.

What is certainly undeniably true, however, is that this entry-level Silvaner, spontaneously fermented in wooden barrels, comes from young vines and absolutely outshines quite a few other examples of supposedly similar quality. Precise, clear, and just the right amount of natural. Cheers!
