Kloster Ebernach’s Cochemer Bischofsstuhl Riesling expresses the elegant, fruit-driven style associated with the Mosel, combining tropical fruit with bright citrus and a distinctly stony minerality. Its balance of refreshing acidity and gentle sweetness makes it both characterful and remarkably versatile at the table.
Tasting Notes
Bright and inviting in the glass, this Riesling opens with expressive aromas of passion fruit and pineapple, complemented by dried spices and a fresh hint of lemon. On the palate, the exotic fruit is held in balance by pronounced mineral notes and lively Mosel acidity, creating a refreshing, harmonious finish with a gently sweet impression.
The wine is particularly appealing in its youth, when its aromatic fruit and crisp freshness are at their most vibrant. It may also develop additional harmony and softer fruit complexity over the short to medium term when properly stored.
Production
The grapes come from the Cochemer Bischofsstuhl in the Mosel, where stony soils and a cool microclimate help preserve freshness while lending the wine its mineral character. The grapes are hand-harvested and carefully selected before being destemmed and left to macerate on their skins for approximately six hours. After gentle pressing, the must ferments in stainless-steel tanks, preserving the wine’s purity, freshness and aromatic intensity.
Food & Serving
A versatile choice for the dinner table, this Riesling is especially well suited to spicy Asian cuisine, where its fruitiness and acidity provide a refreshing counterpoint to heat and aromatic spices. It also pairs beautifully with full-flavoured cheeses and can accompany a light dessert such as mascarpone and yoghurt mousse with mango and passion-fruit sauce, finished with white-chocolate flakes. Serve well chilled at approximately 8–10°C; decanting is not necessary, although a brief airing in the glass can help open its aromas.
