At Weingut Karl Johann Molitor, yields are deliberately kept low through green harvesting in summer, with some grape clusters removed early to allow the remaining fruit to reach optimal physiological ripeness. For this Spätlese, the grapes are picked late, when they are fully mature and richly flavored, often at the expense of quantity to prioritize quality. The fruit is carefully sorted, gently pressed and fermented at controlled temperatures in the cellar to preserve purity of aroma and site character. Fermentation is stopped with a measured amount of natural residual sugar remaining, giving the wine its classic Spätlese balance of sweetness and tension, followed by maturation on fine lees to enhance texture and complexity.
