Tasting Notes
In the glass, this Spätburgunder presents a translucent ruby-red hue with a youthful, lively brightness—inviting and almost glowing, especially in magnum. On the nose, a subtle, flinty reduction initially adds a smoky, slightly “wild” edge, which quickly opens into aromas of red berries: think freshly picked raspberries, wild strawberries and red cherries. Underneath, there’s a touch of earthy, animal spice and delicate wood tones that lend nuance without weighing the wine down.
On the palate, the wine is buoyant, juicy and wonderfully drinkable, with a light to medium body that glides rather than grips. Tannins are intentionally restrained and fine-grained, offering just enough structure to frame the fruit without ever becoming drying. Organically farmed vineyards form the backbone of this cuvée, with careful, largely manual work in the vines to ensure healthy, balanced fruit and moderate yields. Grapes are harvested at optimal ripeness—often by hand—to preserve delicate aromas and maintain the natural acidity that defines the style. In the cellar, Moritz Kissinger focuses on a minimal-intervention approach: spontaneous fermentation with native yeasts, gentle extraction, and élevage in a combination of small and large wooden casks. The result is a wine that marries precision with a touch of wild character, allowing the pure expression of Spätburgunder and place to lead the way.

This is a highly versatile food wine, perfectly suited to modern, relaxed dining. Pair it with charcuterie boards, roast chicken, grilled vegetables, mushroom dishes, or lighter preparations of pork and veal.
