Moritz Kissinger Deutscher Winzersekt Nr. 3 Bio Brut Nature is a striking example of how Germany’s new generation of winemakers is redefining sparkling wine. Crafted from Chardonnay, Pinot Noir (Spätburgunder) and Pinot Blanc (Weißburgunder), this certified organic Sekt channels the finesse and tension of grower Champagne while remaining distinctly Rheinhessen at heart. The cuvée blends base wines from 2022 with around 15% reserve wines from 2021 and 2020, making the ‘Nr. 3’ name a playful nod both to Kissinger’s third release and its three-vintage composition.

Tasting Notes
In the glass, this Brut Nature pours a bright, pale straw with subtle golden highlights and a fine, persistent bead that speaks to careful secondary fermentation and aging on the lees. The nose is taut and expressive, offering fresh green and yellow apple, pear skin, and lemon zest, layered with white blossoms, chalky minerality, and a gentle touch of brioche and hazelnut from its maturation in small and large wooden casks and time on the lees. On the palate, Winzersekt Nr. 3 is bone-dry, linear and energetic, with a vivid, saliva-inducing acidity that keeps the wine dancing across the tongue. The Chardonnay brings drive and citrusy precision, Pinot Blanc adds juiciness and subtle creaminess, while Pinot Noir contributes structure and a hint of red berry and spice. The mousse is fine and integrated, giving the wine both elegance and serious drinkability. As a Brut Nature, there is no dosage softening the edges, so the finish is long, mineral and refreshingly crisp, with lingering notes of citrus peel, green almond and chalk. Enjoyable now for its vibrant freshness, it has the structure and acidity to evolve gracefully over the next 3–5 years, gaining more nutty, toasty complexity.

Production
Sourced from organically farmed vineyards in Rheinhessen, this Winzersekt reflects a cool-climate terroir of gently rolling hills, mixed soils and a strong emphasis on freshness and precision. The grapes—Chardonnay, Spätburgunder (Pinot Noir) and Weißburgunder (Pinot Blanc)—are harvested by hand to ensure optimal selection and brought quickly to the cellar to preserve delicate aromatics. Fermentation and élevage take place in a mix of small and large wooden casks, building texture and complexity without overwhelming the wine’s natural tension. The 2022 base wine is blended with roughly 15% reserve wines from the 2021 and 2020 harvests, adding depth and continuity across vintages. After the traditional bottle fermentation, the wine rests on its lees to develop fine bubbles and subtle autolytic notes, and it is finally disgorged without dosage, resulting in a pure, uncompromising Brut Nature style.

Food & Serving
This precise and gastronomic Sekt is a versatile partner at the table. It pairs beautifully with oysters, sashimi, ceviche, and other raw or simply prepared seafood, as well as lightly fried dishes like tempura or tonkatsu where the brisk acidity cuts through richness. It also works well with goat cheese, fresh cheeses, vegetable terrines, sushi, or delicate poultry and veal dishes with light cream or citrus-based sauces. Serve well chilled at around 7–9°C (45–48°F). A brief 10–15 minutes in the glass, or a short, gentle decant in a carafe, can help the wine open up aromatically, but extended decanting is not necessary—its tension and brightness are part of the charm.
