Moscato Giallo is typically harvested by hand at optimal ripeness, with carefully selected bunches often undergoing a period of drying (passito) to concentrate sugars and flavors. In the cellar, the gently pressed must is fermented at controlled, cool temperatures to protect the delicate floral and muscat aromatics, with fermentation intentionally stopped to retain natural residual sugar. The wine is then matured—often in stainless steel or neutral vessels—to emphasize purity and freshness, resulting in a dessert wine that is rich yet finely balanced.
