The cool climate and excellent drainage allow for slow, even ripening, concentrating flavor while preserving vibrant acidity. Grapes are harvested by hand in multiple passes to select only perfectly ripe, healthy fruit. In the cellar, Sebastian Schäfer works with a gentle, minimalist approach: careful pressing, slow, temperature-controlled fermentation—often in stainless steel and/or traditional large wooden casks—and extended time on the fine lees to build texture and complexity without masking the pure expression of site. The result is a dry Riesling of finesse, density and precision.
