Tasting Notes
In the glass, this Champagne shows a luminous, pale to medium gold hue with delicate, persistent bubbles forming a fine, creamy mousse. On the nose, it opens with ripe orchard fruits—think yellow apple and Williams pear—layered with wild strawberry, blood orange zest, and redcurrant, alongside notes of brioche, toasted hazelnut, chalk, and a subtle hint of dried rose and white pepper.
The palate is both vinous and taut, with the structure and depth you would expect from pure Pinot Noir. Juicy red and yellow fruit are wrapped in a spine of chalky minerality and vibrant acidity, giving the wine a long, mouthwatering finish. Les Gayeres is a single, Premier Cru lieu-dit in Pierry, in the heart of Champagne’s Côteaux Sud d’Épernay, where Pinot Noir thrives on chalky, limestone-rich soils with clay and flint that lend both power and finesse. JM Sélèque works according to sustainable, low-intervention principles, with meticulous hand-harvesting at optimal ripeness to preserve fruit integrity. In the cellar, the Pinot Noir for Soliste is traditionally vinified with gentle pressing, fermentation in a combination of stainless steel and often neutral oak to build texture, and extended aging on the lees to develop complexity before tirage. The wine undergoes secondary fermentation in bottle and rests sur lattes for several years, with a very low Extra Brut dosage added at disgorgement to highlight the precision of the terroir and the character of the 2018 vintage.

This is a gastronomic Champagne that shines at the table.
