Production
Capo Martino comes from a 7.5-hectare single vineyard in the heart of the Collio/Gorizia hills in Friuli-Venezia Giulia, an area famed for its marl and sandstone soils that give wines their characteristic minerality and depth. The vineyard, purchased by Jermann in 1991 and carefully renovated between 1996 and 2003, is planted with traditional local white varieties selected for balance and complexity. Grapes are typically hand-harvested at optimal ripeness to preserve both aromatic intensity and natural acidity. After gentle pressing, the must is vinified in temperature-controlled conditions, often with a combination of stainless steel and large or neutral wood to enhance texture without overwhelming the varietal character. The resulting blend is assembled with meticulous attention to harmony, then allowed to rest on fine lees to build complexity, mouthfeel and length.
