From one of Savigny-lès-Beaune’s most admired Premier Cru sites, Jérémy Recchione’s Savigny 1er Cru Les Lavières 2023 is a deeply expressive, dark-fruited Pinot Noir with striking precision. This cuvée marries the natural intensity of Les Lavières with Jérémy’s thoughtful, contemporary touch in the cellar. The result is a Burgundy that feels both authentic to its terroir and refreshingly vivid in style, offering serious aging potential without sacrificing immediate pleasure.

Tasting Notes
In the glass, the 2023 Les Lavières shows a vibrant, deep ruby hue with a youthful sheen at the rim. The nose is lifted and complex, thanks in part to the 75% whole-cluster fermentation: ripe black cherries, wild strawberries and blackcurrants intertwine with hints of rose petal, crushed herbs, subtle spice and a touch of forest floor. There’s a beautiful interplay between dark, concentrated fruit and airy, high-toned aromatics. On the palate, the wine is intense yet finely etched, with juicy dark berry and cherry fruit wrapped in a precise, fresh acidity. Silky but present tannins provide a firm backbone, giving the wine both structure and finesse. Subtle herbal and floral notes from the stems add dimension without ever dominating, leading into a long, elegant finish with a mineral, stony edge that speaks clearly of its Premier Cru origins. This is a wine that will reward patience: while already charming with some aeration, it has the structure and balance to evolve gracefully over the next 8–12 years.

Production
Les Lavières takes its name from the flat slabs of limestone historically quarried in this area, and that stony subsoil, combined with clay-limestone topsoils, gives the wine its hallmark balance of depth and minerality. In 2023, the Pinot Noir was harvested by hand at optimal ripeness to preserve freshness and aromatic purity. Jérémy chose to ferment around 75% of the bunches whole-cluster, allowing the stems to contribute gentle spice, lift and fine-grained tannin. Vinification is careful and minimalist, favoring gentle extractions to avoid heaviness, followed by élevage in Burgundy barrels (with a restrained use of new oak) to refine texture and integrate the components while keeping the terroir’s character front and center.

Food & Serving
This Savigny 1er Cru Les Lavières is a versatile food wine that shines alongside refined yet comforting dishes. Think roast duck with cherries, herb-crusted lamb, veal chops, or free-range chicken with morel mushrooms. It also marries beautifully with earthy plates like mushroom risotto, truffle-inflected pasta, or aged hard cheeses. Serve at 14–16°C to highlight its aromatic lift and freshness. If enjoyed young, decant for 30–60 minutes to soften the tannins and allow the floral and herbal nuances from the whole-cluster fermentation to fully emerge.

Working in and around Savigny-lès-Beaune, he focuses on expressing the character of each individual site with clarity and precision rather than power for its own sake. Though relatively young compared to some of Burgundy’s historic domaines, his wines have quickly gained attention among enthusiasts for their purity, energy and thoughtful craftsmanship. Les Lavières, as one of Savigny’s benchmark Premier Crus, is a cornerstone of his range and a clear demonstration of his ability to balance intensity, elegance and ageworthiness.
