From one of Puligny-Montrachet’s most coveted Premier Cru sites, Jean-Michel Gaunoux Puligny 1er Cru Les Folatières 2023 shows the poised, focused style that has made this vineyard so admired. Sitting high on the slope above Le Clavoillon and Les Pucelles, Les Folatières is prized for its combination of tension, depth, and lifted minerality.
Tasting Notes
Pale gold in the glass, this 2023 reveals a precise and luminous profile. The nose opens with white flowers, citrus peel, crushed stone, and a subtle buttery nuance, while the palate is sleek and vibrant, moving from lime and green pear to touches of peach and almond.
A chalky mineral backbone gives the wine real structure and length, carrying the finish to a salty, almost weightless close. This is a wine built on finesse rather than overt power, and it should develop beautifully over the next 7–10 years, gaining extra complexity and texture with age.
Production
The grapes come from a high-altitude Premier Cru parcel in Puligny-Montrachet, where the cooler slope helps preserve freshness and precision in the Chardonnay. The vineyard is farmed without artificial inputs and harvested by hand into small cases to protect fruit quality. Vinification is carried out with a light touch: slow pressing, spontaneous fermentation in oak barrels with around 30% new oak, and 12–14 months of lees aging without bâtonnage, allowing the terroir to remain the focus.
Food & Serving
This wine is an excellent match for lobster, scallops, roast poultry, creamy risotto, or delicate fish dishes with a beurre blanc or citrus-based sauce. Serve at 10–12°C to keep the wine fresh and expressive, and consider a short decant of 20–30 minutes if serving young, though it can also be enjoyed straight from the bottle.
