Jean-Marie Haag Confidentiel Sylvaner 2009 is a rare, late-harvest dessert wine from the rolling hills of Alsace, crafted in an elegant 0.5L format that’s perfect for sharing at the end of a meal. Made from carefully selected Sylvaner Verde grapes, this cuvée shows just how complex, aromatic and age-worthy this often-underestimated variety can be. The 2009 vintage, marked by generous ripeness and excellent concentration, gives this wine a luxurious sweetness balanced by vibrant acidity.

Tasting Notes
In the glass, this Confidentiel Sylvaner presents a deep golden hue with amber highlights, a clear sign of both maturity and richness. Slow, generous legs hint at the wine’s glycerol texture and residual sugar. The nose is expressive and layered, combining notes of ripe apricot, confit lemon, baked apple and acacia honey with hints of dried herbs, marzipan and a gentle minerality typical of Alsace. On the palate, it is unctuous yet beautifully balanced: flavors of candied citrus, quince paste, mirabelle plum and honeycomb are lifted by fresh acidity, preventing the sweetness from ever feeling heavy. A subtle spice and a saline, stony finish add complexity and length. With careful cellaring, this 2009 still has several years of life ahead, evolving toward deeper honeyed, nutty and caramelized notes while retaining its structure.

Production
The grapes for Jean-Marie Haag Confidentiel Sylvaner are sourced from select parcels in Alsace, where cool nights and sun-soaked days allow Sylvaner to develop both aromatic intensity and firm natural acidity. The terroir typically features well-drained, mineral-rich soils that contribute to the wine’s tension and precision beneath its sweetness. Late-harvested by hand, only the ripest, healthiest bunches—often with a degree of passerillage or noble rot—are selected in the vineyard to achieve concentrated sugars and complex flavors. In the cellar, the must is gently pressed and fermented slowly at controlled temperatures, preserving delicate aromatics. Fermentation is stopped naturally or cooled to retain residual sugar, and the wine is then matured—often on fine lees—to build texture and depth before bottling in the traditional 0.5L dessert wine format.

Food & Serving
This dessert Sylvaner is a superb match for fruit-based desserts such as tarte Tatin, baked pears, apricot tart and citrus cakes, as well as crème brûlée or almond pastries. It also pairs beautifully with blue cheeses, foie gras terrine and aged, hard cheeses where its sweetness and acidity cut through richness. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to allow the aromatics to fully express themselves. A brief opening in the glass is usually sufficient; decanting is generally not necessary, though pouring it 10–15 minutes before serving can help the wine unfold its more subtle layers.
