Tasting Notes
In the glass, the 2021 Corton-Charlemagne shows a pale to medium golden hue with bright, shimmering reflections that hint at both freshness and concentration. The nose is layered and complex: ripe lemon, green apple and pear mingle with notes of white flowers, fresh almonds and a refined oak influence—think toasted hazelnut, vanilla pod and a touch of warm brioche. A distinct mineral edge, reminiscent of wet stone and chalk, anchors the aromas. On the palate, this Grand Cru is full-bodied yet beautifully poised, delivering a spine of vivid acidity that carries flavors of citrus zest, quince, crisp orchard fruit and subtle stone-fruit richness. Sourced from the slopes of the Corton hill in the northern Côte de Beaune, this Corton-Charlemagne Grand Cru benefits from high-altitude, limestone-rich soils and a cool, windy exposition that naturally preserves acidity and aromatic finesse. Grapes are typically hand-harvested at optimal ripeness to ensure meticulous selection of only the healthiest, most concentrated Chardonnay bunches. In the cellar, the must is gently pressed and fermented in oak barrels—often with a proportion of new French oak—to build texture and complexity, followed by maturation on fine lees with periodic bâtonnage. This traditional Burgundian approach enhances both the wine’s creamy mouthfeel and its signature mineral drive, while allowing the unique character of the Grand Cru terroir to shine.

Food & Serving
This Corton-Charlemagne is a superb partner for refined dishes such as butter-poached lobster, pan-seared scallops, roasted turbot, or sole with beurre blanc. It also pairs beautifully with rich poultry preparations—roast chicken with morels, veal in cream sauce—and high-quality cheeses like Comté, aged Gruyère or Beaufort. Serve at 10–12°C (50–54°F) to highlight its freshness and complexity; as it warms slightly in the glass, the wine will reveal more depth and nuance. Decanting for 30–60 minutes in its youth is recommended to allow the aromatics to fully open and the oak to harmonize.
