Tasting Notes
In the glass, this Auslese shows a deep lemon to golden hue, reflecting both the grape’s ripeness at harvest and nearly two decades of graceful bottle age. Viscous legs cling to the sides of the glass, hinting at the wine’s natural sweetness and concentration. The nose opens with layered aromas of dried apricot, candied citrus peel, baked apple and ripe peach, lifted by notes of honeycomb, acacia blossom and chamomile. With air, more tertiary tones emerge: hints of beeswax, lanolin, smoke, petrol and a subtle herbaceous lift typical of mature Rheingau Riesling. On the palate, the wine is luscious yet poised, with a rich, late‑harvest sweetness framed by a spine of fresh, citrussy acidity. Flavors of apricot preserve, quince jelly and lemon curd mingle with crystallized ginger, ripe pineapple and a light saline, mineral edge from the Wallufer slopes. The texture is silky and mouth‑coating, but the finish remains long, precise and refreshing rather than cloying. Despite its age, this 2007 still has excellent aging potential. Properly stored bottles can continue to develop deeper honeyed, nutty and smoky nuances over the next decade or more, while maintaining the hallmark Becker structure and acidity that keep the wine lively.

Production
The grapes for this Auslese come from the Wallufer Oberberg, a hillside vineyard in the eastern Rheingau overlooking the Rhine. Here, slate and mixed soils on steep, south‑facing slopes capture warmth and reflect light, helping Riesling achieve high ripeness while cool river breezes preserve acidity. The Auslese designation indicates meticulously selected, late‑harvest grapes, often including berries affected by noble rot (Botrytis), handpicked in small passes through the vineyard. True to J.B. Becker’s traditional philosophy, the must is typically fermented spontaneously with native yeasts in large, old oak casks (Stück or Doppelstück), allowing a slow, cool fermentation that preserves fine aromatics. The wine is then matured on its lees in these neutral casks, with minimal intervention, to build texture and complexity while maintaining the purity of the terroir.
