Jaillance Jay’up Brut is a fresh, lively sparkling wine from Die in France’s Drôme Valley, made to highlight bright fruit and an easy-drinking style. Produced by the Jaillance cooperative at the foot of the Vercors, it reflects the region’s long-standing tradition of aromatic sparkling wines and is an appealing choice for aperitifs and relaxed celebrations.

Tasting Notes
Pale and bright in appearance, with a fine, energetic mousse. The nose opens with aromas of green apple, citrus and delicate white flowers. On the palate, it is light-bodied, dry and refreshing, supported by lively acidity and a clean, crisp finish. A short period of ageing on fine lees adds a touch of roundness without compromising its freshness. Best enjoyed young, when its vibrant fruit and aromatic character are at their most expressive.

Production
The grapes are sourced from vineyards on the limestone- and clay-rich slopes around the Drôme River, in the foothills of the Vercors. Jaillance works with a network of affiliated growers in and around Die, focusing on fresh, aromatic wines that express the regional style. Jay’up Brut is made using the Charmat method, with the second fermentation taking place in stainless-steel tanks to preserve the wine’s primary fruit aromas and lively character. It then receives a short period of ageing on fine lees for added softness and texture.

Food & Serving
A versatile aperitif, this sparkling wine is well suited to light starters, fresh salads and delicate seafood. Try it with oysters, mussels, prawns or other shellfish, where its crisp acidity and clean finish provide a refreshing counterpoint. Serve well chilled at approximately 6–8°C. Decanting is not recommended; open just before serving to preserve the wine’s sparkle and freshness.
