Jaffelin Bourgogne Blanc Aligoté Les Chapitres 2025 is a bright, refreshing expression of Burgundy’s traditional white grape, crafted by one of Beaune’s oldest and most respected houses. Made from 100% Aligoté and sourced from chalk-rich vineyards, it delivers the lively acidity, minerality, and purity that have made the grape a classic for crisp, elegant white wines.

Tasting Notes
In the glass, it shows a pale, clear color with green highlights. The nose is fresh and inviting, with citrus, green apple, white flowers, and ripe pear, lifted by a subtle mineral edge. On the palate, it is dry, zesty, and finely balanced, combining juicy fruit with a crisp line of acidity and a clean, citrus-driven finish. Best enjoyed young for its vibrant freshness, though it can gain a little extra roundness over the next 1–3 years.

The grapes come from limestone-rich vineyards in Burgundy, where Aligoté benefits from cool conditions and soils that help preserve its natural freshness and mineral character. Maison Jaffelin vinifies the wine gently in stainless steel tanks to protect the grape’s pure aromatic profile and lively structure.

A versatile food wine, this Aligoté works beautifully with oysters, shellfish, grilled fish, goat cheese, light salads, and simple chicken dishes. Serve chilled at 8–10°C; decanting is not necessary.

Maison Jaffelin has been based in Beaune since 1816 and is one of Burgundy’s most historic négociant houses. Housed in the legendary Caves du Chapitre beneath Notre-Dame de Beaune, the estate is known for small-batch wines that emphasize precision, terroir, and classic Burgundian finesse. Modernized in 2004, the house continues to blend traditional methods with a refined contemporary style under the guidance of oenologist Marinette Garnier.
