Tasting Notes
In the glass, Dizy Terres Rouges 2015 shows a luminous, subtly tinted hue with fine, persistent bubbles that form a delicate, refined mousse. The nose is expressive and precise, opening with red berry notes—wild strawberry, raspberry, and redcurrant—layered with blood orange, pomegranate, rose petals, and a chalky, mineral edge. With air, more complex nuances emerge: hints of dried herbs, subtle spice, and a faint, savory smokiness.
On the palate, this Extra-Brut is taut, dry, and deeply vinous, showcasing the power and structure of Pinot Noir. Intense red fruit is framed by bright, mouthwatering acidity and a firm, chalk-infused backbone. Flavors of cranberry, cherry skin, citrus zest, and a touch of bittersweet grapefruit lead into a long, saline finish with a fine phenolic grip. The low dosage keeps everything laser-focused and refreshingly crisp. While already compelling now, the 2015 Dizy Terres Rouges has the concentration and structure to evolve beautifully for 8–10 years from the vintage, gaining more savory, truffle, and dried-fruit complexity with time in bottle.
Production
Dizy Terres Rouges comes from a single, prized lieu-dit in the Premier Cru village of Dizy, where Pinot Noir vines are rooted in clay-rich, iron-tinged soils over the classic chalk subsoil of Champagne. The site’s warm exposition and distinctive red-tinged earth lend both ripeness and depth to the fruit, while the chalk preserves freshness and tension. Grapes are harvested by hand at optimal maturity, carefully sorted, and gently pressed to preserve purity and finesse. Fermentation typically takes place in large oak foudres or neutral barrels, allowing the wine to develop texture and complexity without overt oak flavor. The wine then rests for an extended period on its lees in bottle, building creaminess and aromatic depth, before disgorgement with a very low dosage to maintain a pure, Extra-Brut style that transparently reflects the character of the terroir and the 2015 vintage.
Food & Serving
This is a gastronomic Champagne that shines at the table. It pairs beautifully with refined dishes built around poultry or game bird—duck breast, quail, or roast chicken with herbs—as well as tuna, salmon, or langoustine, especially when grilled or lightly seared. It is also superb with charcuterie, cured ham, terrines, and aged hard cheeses such as Comté or Gruyère, where its structure and acidity cut through richness. Serve well-chilled but not icy, ideally around 10–12°C (50–54°F), to allow the aromatics to fully express themselves.
