This non-vintage cuvée balances purity, depth, and precision, with a drier Extra-Brut dosage that highlights the natural character of the fruit. Sourced from Grand Cru vineyards in Champagne, it continues the region’s long tradition of Pinot Noir–based Champagnes that are both gastronomic and ageworthy.
Tasting Notes
In the glass, this Champagne shows a bright, pale gold hue with delicate, persistent bubbles that form a fine, creamy mousse. On the nose, it is immediately expressive, with notes of fresh red apple, yellow plum, citrus zest, and white flowers, layered with hints of brioche, hazelnut, and chalky minerality.
The palate is precise and vibrant, showing the structure and intensity typical of Pinot Noir from Grand Cru sites. Flavors of baked apple, ripe pear, and citrus are intertwined with subtle red-fruited tones, like wild strawberry and red currant, supported by a firm mineral backbone. Production
Noir de Vigne is crafted exclusively from Pinot Noir (often called Pinot Nero in other regions), sourced from select Grand Cru vineyards in Champagne, where chalk-rich soils and cool, continental climate contribute to pronounced minerality and tension in the wine. Grapes are harvested by hand to ensure optimal selection and to preserve the integrity of the berries. In the cellar, fermentation takes place in stainless steel and/or neutral vessels to protect the purity of the fruit, followed by an extended period of aging on the lees in bottle to build texture, finesse, and complexity before disgorgement. The Extra-Brut dosage is kept low, allowing the terroir and the natural character of the Pinot Noir to lead.
Food & Serving
This Extra-Brut Grand Cru Champagne is an excellent match for refined yet flavorful cuisine: think oysters or scallop crudo, tuna tartare, sashimi, lobster, or crab, as well as poultry dishes, roast guinea fowl, and light game birds. It also pairs beautifully with charcuterie, aged hard cheeses, and mushroom-based dishes that echo its savory, nutty nuances. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness while allowing the bouquet to open in the glass. A brief 10–15 minutes in a decanter or simply in a large-bowled white wine glass can help the aromas unfurl, especially if the bottle has a few years of age.
