Tasting Notes
The wine shows a deep, intense ruby-red appearance. Its impressive nose is layered with ripe plum and blueberry, complemented by notes of vanilla, sweet spices and well-integrated oak. On the palate, it is full-bodied and aromatic, opening with concentrated black fruit before developing a warm, spicy finish supported by polished tannins and oak-derived depth. Thanks to its fruit concentration, structure and 16–24 months of wood maturation followed by further bottle ageing, the 2021 should drink well now and develop additional softness and complexity over the next few years when stored in suitable conditions.

Production
The estate is located in Ascoli Piceno, among the scenic hills surrounding Monteprandone, where cooling breezes from the Adriatic Sea meet air descending from the Sibillini Mountains. This creates a healthy, balanced microclimate that encourages even grape ripening. The grapes are gently pressed and undergo a slow fermentation in stainless-steel tanks for 15–25 days, followed by 16–24 months of maturation in wooden casks and a further 12 months of bottle ageing. The specific grape varieties used for Zipolo are not stated.

Food & Serving
A natural match for grilled or roasted red meats, beef stew, lamb, game and hearty pasta dishes with tomato or slow-cooked meat sauces. It also pairs well with mature hard cheeses. Serve at approximately 16–18°C. Decanting for 30–60 minutes is recommended to allow the dark fruit, spice and oak notes to open fully, particularly when enjoying the wine soon after opening.
