Tasting Notes
In the glass, the 2019 Il Caberlot shows a deep, vibrant ruby core with youthful purple reflections, signaling both concentration and freshness. The nose is layered and expressive, opening with sweet red and black cherries, ripe blackberry and cassis, followed by tones of graphite, black pepper, tobacco leaf and dried violet. With air, more savory nuances emerge – grilled Mediterranean herbs, cedar, and a touch of warm spice. On the palate, the wine is full-bodied yet remarkably poised, wrapping the mouth in dense, polished fruit. Flavors of sweet cherry, dark plum and blackcurrant are framed by notes of cocoa, clove, grilled herbs and a subtle earthy minerality. Production
The fruit for Il Caberlot is grown on steep, low-yielding vineyards in the Valdarno area of Tuscany, where stony, well-drained soils and a mix of Mediterranean warmth with cooler hillside nights give both ripeness and aromatic lift. Grapes are carefully hand-harvested at optimal maturity, parcel by parcel, to preserve purity and balance. Vinification begins in temperature-controlled stainless steel, with gentle macerations lasting 20 to 30 days depending on the conditions of the harvest, allowing a slow, precise extraction of color, tannin and flavor. After alcoholic fermentation, the wine undergoes malolactic fermentation in barriques with bâtonnage (lees stirring), enriching texture and complexity before extended aging in small oak, and finally bottling exclusively in magnum to favor long, graceful evolution.

Il Caberlot 2019 is a natural partner for refined, flavor-rich dishes such as bistecca alla Fiorentina, roast lamb with rosemary and garlic, slow-braised beef, or game birds with wild mushrooms. It also pairs beautifully with aged Tuscan pecorino, truffle dishes and hearty risottos based on porcini or red wine reductions.
