Tasting Notes
In the glass, the 2019 Il Caberlot shows a deep, vibrant ruby color with an almost velvety density at the core and youthful, purple-tinged edges. The nose is immediately seductive, opening with sweet red and black cherry, ripe blackberry and cassis, followed by nuances of crushed violets, graphite, black pepper, and finely integrated oak spice. Subtle notes of grilled Mediterranean herbs, tobacco leaf and a hint of cocoa add further layers as it unwinds in the glass. On the palate, the wine is full-bodied yet wonderfully poised, wrapping the mouth in concentrated dark fruit and sweet cherry tones supported by finely grained tannins. Flavors of black plum, mulberry, and wild berries mingle with clove, cedar, and savory, charred herb notes. There is a distinct, juicy acidity that carries the wine through to a long, precise and slightly tangy finish, adding lift and tension to the generous fruit. Still youthful, this 2019 has excellent aging potential; it will evolve beautifully over 10–15+ years, gaining more tertiary complexity while softening its structure.

Production
Il Caberlot is grown on the steep, well-drained slopes of the Il Carnasciale estate in Tuscany, where galestro and limestone-rich soils, combined with significant diurnal temperature shifts, help build aromatic intensity and refined structure. Yields are kept deliberately low, and the fruit is harvested by hand in multiple passes to ensure only perfectly ripe clusters are selected. Fermentation begins in temperature-controlled stainless steel tanks, with gentle maceration lasting 20 to 30 days depending on the vintage’s conditions, extracting color and tannin without harshness. After pressing, the wine undergoes malolactic fermentation in French barriques, with regular bâtonnage (lees stirring) to enhance texture and complexity, followed by careful aging in oak before bottling in magnum to preserve freshness and allow slow, harmonious development.

Il Caberlot 2019 is a natural partner for richly flavored dishes such as Tuscan bistecca alla fiorentina, roast lamb with herbs, game birds, or slow-braised beef and veal. It also shines alongside aged pecorino, Parmigiano Reggiano, and truffle-inflected dishes where its savory herbal notes can really express themselves. Serve at 16–18°C (60–64°F) to highlight both its aromatic lift and velvety texture. In magnum format, decanting for 1–2 hours is strongly recommended to allow the wine to open fully; in standard bottle, 60–90 minutes is usually sufficient.
