I Saltari Valpolicella Ripasso Superiore 2020 is a richly styled Veneto red that brings together the finesse of Valpolicella with the depth and warmth of the Ripasso method. Made by Casa Sartori 1898, it reflects both regional tradition and a modern, polished drinking style, with a profile that offers more concentration and complexity than a classic Valpolicella.
Tasting Notes
In the glass, it typically shows a deep ruby colour with garnet reflections, hinting at its added richness and structure. The nose opens with ripe red cherry, blackberry, dried plum, and subtle notes of spice, cocoa, and dried herbs, framed by a gentle savoury undertone from the Ripasso technique.
On the palate, it is medium-full to full-bodied, with juicy dark fruit, supple tannins, and a rounded, velvety texture. Expect layers of cherry compote, red currant, baking spice, and a touch of roasted almond or cocoa on the finish. While enjoyable on release, it should also hold up well over the next few years, gaining extra softness and complexity with short-term cellaring.
Production
Produced in Veneto, this wine draws on the classic Valpolicella terroir, where vineyards benefit from a balanced mix of hillside exposure, cooling breezes, and soils that help preserve freshness while building flavour. The blend of Corvina, Rondinella, Corvinone, and Croatina is harvested and vinified with care, then the wine is refermented or macerated with the skins and lees from Amarone production through the traditional Ripasso method, which adds body, aromatic depth, and a more layered structure before ageing.
Food & Serving
This is a versatile food wine, especially well suited to roasted meats, grilled lamb, beef stews, mushroom risotto, and aged hard cheeses. It also works beautifully with pasta dishes featuring rich tomato sauces or slow-cooked ragù. Serve at 16–18°C; decanting for 30–60 minutes is recommended to help the wine open up and show its full aromatic range.
