Holger Koch is known for careful, hands-on vineyard work, often involving low yields, dense planting and predominantly manual harvesting to ensure only perfectly ripe and healthy fruit makes it to the cellar. In the winery, fermentation is typically carried out with indigenous yeasts to reflect the character of the site as transparently as possible. A significant portion of the wine is usually matured in oak barrels—often larger formats or well-chosen barriques—to build texture without heavy oak imprint.
